This recipe is super diverse and easy to adapt to your dietary needs.
To make vegan:
Chickpeas, soaked and cooked in a slow cooker, instant pot, out of a can, or however you like to cook them are great substitutes for chicken. The lactose-free yogurt is already vegan, but olive oil can be subbed in as well. Or a vegan mayo would work too.
To make dairy-free or gluten-free:
It already is! Use a gluten-free tortilla or corn tortilla or enjoy on a salad.
To make diabetic friendly:
Instead of the cranberries, substitute chopped walnuts or cut green grapes, or both!

Wrap or tortilla:
This is my personal favorite way to eat this salad! I love anything that is wrapped in a warm carb shell. If using a tortilla or wrap, place a slightly damp paper towel on the tortilla while microwaving it for easy folding later and no weird crispy burnt tortilla parts. Pictured is a spinach sandwich wrap that is one of my favorite things to fill. It has the texture of a pita but the taste of a nice tortilla. Add a couple of slices of avocados on the bread or tortilla for a punch of flavor!
Cranberry apple chicken salad is also great on a bed of greens with some olive oil drizzled on it. It feels like you are eating a meal at a chic new place but you are in your office or at home! Throw in a handful of cucumbers, carrots, celery, or cut grapes for a fun pop of texture and flavor.
Grab a gluten-free cracker, trisket, or a trusty saltine, and place chicken salad on the crackers as you go. Cranberry apple chicken salad would be a great addition to a brunch charcuterie board.

- 1 pound shredded chicken
- 1 apple, any kind, chopped
- ¼ cup chopped green onion
- ½–⅓ cup of craisins, raisins or grapes
- ½ cup lactose-free yogurt or olive oil
- 2 tbsp of lemon juice (juice of 1 small lemon)
- salt and pepper to taste
- avocado (optional)
- Combine chicken, apples, craisins, green onions in a bowl.
- Add yogurt, lemon juice, salt, and pepper to the chicken mixture.
- Mix ingredients together. Serve on a tortilla, wrap, sandwich bread, or on a salad with avocado.
- Add walnuts, peanuts, or sunflower for an extra crunch.
- Olive oil can be added instead of dairy-free yogurt
